Ingredients:
- 1/2 cup dates (soaked in boiling water for 10 mins- drain boiling water after soaked)
- 2 cups almond meal
- 1/2 t salt
- 1/2 t cinnamon
- 1 t baking powder
- 3 eggs
- 2 bananas (peeled)
- 1 t vanilla
- 1 T honey
- 1/4 cup coconut oil at room temp (can substitute for butter)
- 1/2 cup figs chopped
Method:
Whiz the dates, almond meal, salt cinnamon and baking powder.
Once these ingredients reach a paste consistency add the banana’s, eggs, vanilla, coconut oil and honey.
Once all of the ingredients are combined smoothly, stir through the chopped figs, then pour the mixture into a loaf tin.
Bake in the oven for 30-35 minutes at 180 degrees Celsius.
