Ingredients:

  • 1/2 cup dates (soaked in boiling water for 10 mins- drain boiling water after soaked)
  • 2 cups almond meal
  • 1/2 t salt
  • 1/2 t cinnamon
  • 1 t baking powder
  • 3 eggs
  • 2 bananas (peeled)
  • 1 t vanilla
  • 1 T honey
  • 1/4 cup coconut oil at room temp (can substitute for butter)
  • 1/2 cup figs chopped

Method:

Whiz the dates, almond meal, salt cinnamon and baking powder.

Once these ingredients reach a paste consistency add the banana’s, eggs, vanilla, coconut oil and honey.

Once all of the ingredients are combined smoothly, stir through the chopped figs, then pour the mixture into a loaf tin.

Bake in the oven for 30-35 minutes at 180 degrees Celsius.
